New Orleanians don’t eat to live, they live to eat. Pompano en papillote, Oysters Rockefeller, gumbo, jambalaya and crawfish are a native’s idea of heaven and earth. And New Orleans’ restaurants take their place beside the best in New York and San Francisco.
French cooking has been wedded to the intense spiciness of Spanish and Caribbean to create Creole delicacies; Cajun food relies on game and crustaceans in wildly inventive sauces; the Choctaw Indians gave the chefs of New Orleans file’; powder, the secret ingredient of a true gumbo; seafood is almost a passion; and red beans and rice and boudin, once staples of the poor man’s palate, are stars in their own right. Dining is an occasion in New Orleans, whether it be a dozen plump, sweet oysters on the half shell at a stand up bar or an elegant and lengthy meal at one of the many restaurants in this food fanatic city.
The New Orleanians tend to start early and to do their cocktailing where they dine. Sazeracs at seven slip into supper, followed by stringers at midnight. Lunch is often a fried oyster, a catfish poboy or an Italian muffaletta sandwich, and weekend brunches are a long standing tradition. The best breakfast in town is a steaming cup of thick black chicory coffee and beignets, puffy fried doughnuts, liberally dusted with icing sugar, eaten outdoors at the French Market.
